Cuban-born and Miami-raised Camila Ramos is a barista, retail manager, and a Senior Coffee educator at Panther Coffee. Actually she’s not just any barista, she’s the top barista in the southeast and #5 in the nation! Her cuban roots sparked her love of coffee, claiming her mother would wake her up with a “bottle of café con leche until she was 12.”

Camila’s talk opened my eyes to the scientific nature of almost everyone’s favorite morning drink… “Are you saying that there’s more to coffee than Folger’s??” You got that right! Seriously, I did not realize how much coffee goes through before it’s ready to drink. A region’s soil, the coffee cherry’s ripeness, and differences in roasting and brewing time greatly affect the bean and your beverage. Bright, nutty, metallic, and caramelly were used to describe coffee in varying stages and types.

Watch the “hidden” story behind how coffee goes from a little seed to your cup…

“Hidden” Bonus: The Genuine Kitchen and Catalina Ayubi visited pastry chef Kelly Russell at Michael’s Genuine Food and Drink while she crafted the delicious coffee cake for CM/Miami’s complimentary breakfast. Check out the interview and the recipe here!
