Back to Rome…

This was my third trip to Rome, an expansive city where I have wandered the ancient sites and museums multiple times… but I was looking for something new on this return trip, which has still evaded me… Maybe I need to look past the sites and return again with losts of cash and splurge on the best of the best food and drink. Maybe I’ve seen all there is to see? I’d like to think it’s the former.

Something new I did discover while here was a great restaurant called Cacio E Pepe, where I had the most delicious (and reasonably priced) carbonara I ever had. I devoured my half bowl of Carbonara and followed it with another half portion of cacio e pepe, a simple pasta dish with pecorino, parmesan, and cracked pepper. The dish was served with a bit of pasta water at the bottom so when you stir the pasta together with the cheese, it thickens up almost into a sauce. Both pasta dishes are traditional to Rome and are worth trying while you’re in the city!

Other than eating my weight in pasta and pastries, I ventured out to Umbria to explore the hilltop city of Orvieto and Tivoli to visit Hadrian’s Villa…
